Morning Glory Muffins

Morning Glory Muffins (Sheila)

3 ½ cups white flour
½ cups whole wheat flour
1 cup sugar
¾ cup honey
4 tsp soda
4 tsp cinnamon
1 tsp salt
1 cup grated carrots
1 cup chopped nuts
4 cups peeled and grated apples
6 eggs
1 cup oil
1 cup applesauce
4 tsp vanilla


Mix flour, sugar, honey, soda, cinnamon and salt. Stir in carrots, nuts and apples. Beat eggs, oil, applesauce and vanilla; stir into flour mixture. Spoon into greased tins or paper lined muffin pans. Bake at 350°F for 25-30 minutes. Makes 4 dozen.
